Normal ranch is an oil emulsion with some buttermilk waved over it. Ours starts with the yogurt and never touches the oil. The numbers follow from that.

Why we made it

Sauce shouldn't be the thing you feel bad about.

Ranch is the most popular dressing in the country, and most of it is soybean oil with a flavor packet. Fourteen grams of fat, zero protein, and a label you need a chemistry degree to read.

We are a small operation in Chicago and we got tired of choosing between the sauce we wanted and the one we should have. So we started over with Greek yogurt and kept going until it tasted like ranch. Not like yogurt with dill in it. Ranch.

We make it ourselves, in small batches, in a shared kitchen in the city. It goes in the fridge, not on the shelf, and it will not last six months in your pantry. Good.

Yogurt-ranch grilled chicken

This is the one a normal ranch cannot do. Yogurt tenderizes, so the same bottle you dip with is also the marinade. Juicy every time, and you did not buy a second thing.

You need4 chicken thighs or 2 breasts, 1/2 cup KALO, 1 lemon, salt, pepper. Extra KALO for the table.

  1. Coat the chicken in ranch, the juice of half the lemon, and a good pinch of salt. Bag it or bowl it. 20 minutes minimum, overnight is better.
  2. Wipe most of the marinade off so it does not scorch. Grill or pan-sear over medium-high, 5 to 6 minutes a side for thighs, until 165°F inside.
  3. Rest 5 minutes. Slice. Squeeze the other half of the lemon over the top and serve with fresh ranch, not the marinade.

Works with pork chops and shrimp. Shrimp only needs 15 minutes in the marinade.

Crispy smashed potatoes

Salty, crunchy, and the ranch is the whole point.

You need1.5 lb small potatoes, olive oil, flaky salt, chives, KALO.

  1. Boil potatoes in salted water until a fork goes in easy, about 15 minutes. Drain and dry.
  2. On an oiled sheet pan, press each one flat with a glass. Oil the tops. Salt hard.
  3. Roast at 450°F for 20 to 25 minutes until the edges are brown and crackly.
  4. Ranch over the top, or on the side. Chives.

Buffalo chicken wrap

Heat on one side, cool on the other. The ranch is the cool side.

You need2 cups shredded rotisserie chicken, 3 Tbsp hot sauce, 2 large tortillas, romaine, celery, KALO.

  1. Toss the chicken in hot sauce. Warm it if you want, but it does not have to be.
  2. Spread a heavy stripe of ranch down each tortilla.
  3. Pile on chicken, chopped romaine, thin celery. Roll tight, cut on the bias.

Toast the wrap seam-side down in a dry pan for 2 minutes and it holds together.

The chopped salad

The one people mean when they say they like ranch salad. Everything cut small so every bite has all of it.

You need1 head romaine, 1 cup corn, 1 cup cherry tomatoes, 1/2 cup crumbled bacon, 1 avocado, cheddar, KALO.

  1. Chop everything to about the same size. Bite size, not salad size.
  2. Dress with 3 to 4 Tbsp of ranch and toss hard. It should coat, not pool.
  3. Taste. Salt and black pepper, more than you think.

  1. Pour ranch into a bowl. This matters more than it sounds like it does.

Things people ask us.

What's actually in it?

Non-fat Greek yogurt and buttermilk as the base, then the classic ranch spices: dill, garlic, onion, black pepper. No seed oils, no gums, no preservatives, nothing artificial.

Where does the protein come from?

Dairy. The yogurt does most of the work, plus a dairy protein that keeps it thick without gums. We are finishing the formula with the Center for Dairy Research at UW Madison, so the final numbers go on the label, not on a website.

When can I buy it?

First bottles go out at Chicago farmers markets, then independent grocery. We are in formulation now and we are not going to announce a date we cannot hold. The list hears first. That is what the list is for.

Is it refrigerated?

Yes. It lives next to the fresh dressings, not in the shelf-stable aisle. That is why it can skip the preservatives.

Allergens?

Contains dairy. Gluten-free. No nuts, no soy, no egg.

How is this different from the other protein ranches?

Most of them are shelf-stable, which means an oil base plus preservatives to get there, with protein isolate stirred in. We went refrigerated and built the protein in through the dairy itself. It tastes like ranch because it is mostly made of ranch.
